GARLIC ROASTED POTATOES  - CHRISTMAS RECIPES

Hi! I made these with dinner tonight, using Yukon Gold potatoes and my family LOVED THEM! So simple and easy but so delicious! My daughter absolutely loved them and she is so picky! I cooked them for an hour and 5 minutes at 400. I will definitely be making these again! Crispy (not burned!) on the outside and fluffy on the inside.

INGREDIENTS


  • 2 tablespoons minced garlic, (or 8 cloves garlic, minced)
  • 2 tablespoons fresh chopped parsley
  • 2 pounds (1 kg) potatoes, cut into 1-inch cubes
  • 2 tablespoons good quality olive oil or canola oil
  • 1 teaspoon sea salt
  • 3/4 teaspoon freshly ground black pepper


INSTRUCTIONS

HOW TO ROAST POTATOES

  1. Frist, Preheat the oven to 400°F (200°C). Lightly spray a baking sheet or tray with cooking oil spray.
  2. Next, Arrange potatoes on sheet in a single layer. Drizzle with the oil and season with salt, pepper and garlic. 
  3. Then Toss so potatoes are evenly seasoned. 
  4. Next, Roast in the oven for 45-55 minutes while flipping occasionally, until crisp and golden.
  5. Then Remove the potatoes from the oven and season with a little extra salt and pepper to taste. 
  6. Then Sprinkle over with parsley and serve immediately!
  7. Enjoy It !
