Cauliflower Holiday Stuffing

On high, check chicken with thermometer at 3 hour mark. This is usually when breasts are fully cooked.

Ingredients


  • 2 stalks celery, small diced
  • 1 cup finely chopped crimini mushrooms
  • 3 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 2 tablespoons freshly chopped parsley
  • 1 large head Cauliflower (about 1-pound), cut into small florets
  • 1 medium red onion, thinly sliced
  • 1/4 teaspoon garlic powder
  • 1 teaspoon Italian seasoning


Instructions

  1. Frist Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, combine the cauliflower florets, onion, celery, mushrooms, olive oil, garlic powder, Italian seasoning, salt, and pepper. 
  3. Then Stir the mixture until all of the vegetables are well coated in the seasonings.
  4. Spread the mixture in a single layer on the sheet pan, using two pans if necessary.
  5. Then Roast for 30 minutes, turning halfway, until the cauliflower is golden brown and the onions are caramelized.
  6. Top the stuffing with the fresh parsley before serving.
  7. Enjoy!
