GARLIC BUTTER HERB STEAK BITES WITH POTATOES

This is a great recipe but steak can be terribly expensive and tough or hard to chew if not cooked properly. So – I changed the cooking method and the steak to stew beef. I cooked it in my Power Pro XL Pressure cooker. I browned the potatoes and the beef in the butter. Then added the rest of the ingredients but I also added 1/4 cup of water with a 1 teaspoon of Better than Bouillon base mixed into it. Locked down the lid and cooked it for 5 minutes. Did a natureal release for 10 minutes. 
Scouped out the potatoes and meat and then poured the remaining sauce over it. Yum and the beef was very tender.

Ingredients


  • 1 pound yukon gold potatoes sliced about 1/2 inch in thickness
  • 3 garlic cloves minced
  • 1 1/4 pounds sirloin steaks cut into 1 inch cubes
  • salt and pepper
  • 1 teaspoon thyme chopped
  • 1 teaspoon rosemary chopped
  • 1 tablespoon olive oil
  • 2 tablespoons butter divided
  • 1 teaspoon oregano chopped

Instructions


  1. Frist Heat a large cast iron skillet over medium high heat and add olive oil and butter, potatoes, garlic, thyme, rosemary, and oregano. 
  2. Then Cook for about 3 minutes, stir and cook and additional 3 minutes until fork tender. Remove and set aside on a plate.
  3. Turn the skillet to high heat. Add the 1 tablespoon butter and steak bites. 
  4. Then Let the steak sear for a minute and then continue to stir the steak until they are golden brown.
  5. Top the steak with fresh chopped herbs.
  6. Enjoy!
