Triple-Mango Chicken

This dish taste really well with very excellent taste, by the way this mango chicken could either be eaten with plain rice or coconut rice. This tropical dish really has authentic Jamaican flavor, because Jamaicans can really serve this dish at any family function including birthday parties, weddings, tea parties, barbeques, concerts, funerals and all other events etc.

Ingredients

  • ¼ cup mango chutney
  • 1 mango, seeded, peeled and cubed
  • ½ cup mango-blend fruit drink
  • 2 medium zucchini, thinly sliced lengthwise
  • 1 tablespoon olive oil
  • 4 small skinless, boneless chicken breast halves

Directions

  1. Frist In very large skillet heat oil over medium-high heat; reduce to medium. 
  2. Then Add chicken. Cook 6 minutes; turn. Add mango cubes, mango drink, and chutney. 
  3. Then Cook 4 to 6 minutes or until chicken is no longer pink, stirring occasionally.
  4. Meanwhile, place zucchini and 14 cup water in microwave-safe 2 quart square dish. Cover with vented plastic wrap. 
  5. Then Micro-cook on 100 percent power (high) 2 to 3 minutes, stirring once; drain. Place chicken on top zucchini. 
  6. Then Season with salt and crushed red pepper.
  7. Enjoy!
